Welcome To My Blog

I am a very happy and blessed wife, mother, and grandmother. My love of cooking came from the love that I have for my family. It warms my heart to hear my husband or one of my children ask me to cook something for them. Not so long ago one of the ladies from my church, ask me to teach her to cook a real southern dinner of fried chicken...what an awesome honor that was! This started me to thinking that alot of newly married people would love to be able to cook a "for real" southern dinner, as well as couples that have never been introduced to the art of southern cooking.... so the blog begins. I hope everyone enjoys it and takes alot away from it. It comes from the heart, but may NOT be so heart healthy. It is Just Good Ole Fashion Southern Cooking!!!!

Banana Pudding

Nothing says Southern like Banana Pudding.......


1 box nilla wafers
5 or 6 bananas
2 regular size boxes of instant vanilla pudding
3 cups milk
8 oz. sour cream
1 large container Cool Whip

1. Put milk in a large mixing bowl. Add pudding and mix until thick. Add sour cream and mix well. Gently fold in cool whip until well blended.
2. Place nilla wafers in bottom of a 9x13 glass baking dish. Layer with bananas then with a layer of pudding...Continue layering until all is used; end with pudding. Sprinkle wafer crumbs on top. Refrigerate until ready to serve.

Chocolate Delight

1 cup flour
1 stick butter
1 cup nuts, chopped

Mix flour, butter, and nuts for the crust. Press into a 9x13 glass baking dish. Cool Completely.

8oz. cream cheese
1 1/2 cup powdered sugar
1 1/2 cup cool whip

Mix softened cream cheese, powdered sugar, and cool whip. Spread on cooled crust.

2 pkg. chocolate instant pudding
3 cups milk

Mix pudding and milk together. Spread on cream cheese mixture. Top with remaining cool whip and garnish with chocolate shavings or nuts.

Follow the scripture and make a wonderful cake.

1 cup Judges 5:25
2 cups Nahum 3:12
1tsp. Exodus 16:31
2 cups 1 Samuel 30:12
6 Isaiah 10:14
3 tsp. Judges 9:13
31/2 cups 1 Kings 4:22
1 cup Genesis 24:17
2 cups Jeremiah 6:20
1 cup Numbers 17:8
1 pinch Leviticus 2:13

Season to taste with 2 Chronicles 9:9. Follow Solomon's prescription for a good boy in Proverbs 23:14 and bake. Each scripture verse contains one or more ingredients used in making a cake. Enjoy the cake while your heart will be blessed as you look at the word of God.

Taco Soup

1lb. hamburger
2 packages taco seasoning
2 cans corn
2 cans black beans
2 cans tomato sauce
1 can rotel
1 can diced tomatoes
1 jar chunky salsa
shredded cheese
sourcream
tortilla chips

Brown hamburger and drain well. Add in all ingredients, except cheese and sourcream. Simmer for 2 hours. Serve with cheese, sourcream, and tortilla chips.

Taco Dip

1 can refried beans
1 package taco seasoning
1 small container sour cream
tomato, diced
shredded lettuce
black olives
onion
shredded cheese


In a deep dish platter, spread refried beans evenly on the bottom. In a bowl mix taco seasoning and sourcream together, until well blended. Pour on top of beans. Place other ingredients in order on top od sourcream mixture. Add shredded cheese. Serve with corn chips.

Chicken Divan

2 heads fresh broccoli
2 cups cooked chicken breast
2 cans cream of chicken soup
1 cup mayonnaise
1/2 cup sharp cheddar cheese
1/2 cup bread crumbs
1 tsp butter, melted
1 tsp lemon juice

Cook broccoli in salted boiling water until tender. Drain well. Put broccoli in a buttered baking dish. Place chicken on top. Combine soup, mayonnaise, lemon juice; pour over chicken. Sprinkle with cheese. Combine bread crumbs and butter and sprinkle over mixture. Bake in a 350 degree oven for 25 to 30 minutes or until thoroughly heated.

Lace Cookies
 
1 cup (uncooked) oats
  • 1 cup sugar

  • 2 T. plus 1tsp. plain flour

  • 1/4 tsp. salt

  • 1 egg, slightly beaten

  • 1/2 cup butter, melted

  • 2 tsp. vanilla extract

  • Combine 1st 4 ingredients - mix well.

  • Stir in remaining ingred.

  • Drop by 1/2 tsp. 3-inches apart onto aluminum foil lined cookie sheets. Bake at 350 for 6 - 8 minutes or until edges are light brown. Cool completely before removing. (The cookies will peel right off the foil and you can re-use the foil for more cookies.)

    Savory Cheese Ball

    1 block cream cheese
    1 cup shredded cheese
    1 tbs. garlic powder
    Pecans- crushed


    Mix all ingredients excepts pecans. Shape into a ball. Roll in crushed pecans. Chill for 1 hour before serving. Serve with crackers.

    Proverbs 20:12

    If you have ever wondered what God has done for you; now you know, just being able to see and hear are gifts that our Heavenly Father has given to us and should be treasured daily. Never take aything you have for granted.

    Southern Mashed Potatoes

    7-8 medium potatoes
    1/2 cup milk
    1/2 stick salted butter
    1 block cream cheese
    salt and pepper to taste.

    Peel and dice potatoes. Place potatoes in boiling water and cook until tender. Drain potatoes well. Add other ingredients and mash with a potatoe masher. Place mixture in a buttered baking dish and bake for 20 minutes at 325 degrees. Serve plain or with gravy. So good.

    Strawberry Freezer Jam

    2 cups ripe strawberries, crushed
    1 box Sure-Jell
    4 cupss sugar

    Mix sugar into berries, let  stand 10 minutes; stir to dissolve sugar. Mix 3/4 cups water and Sure- Jell in saucepan. Bring to a boil and boil 1 minute, stirring constantly. Stir into berries, continue stirring 3 minutes. Ladel into containers, cover with lids and let set 24 hours at room temperature. Store in freezer.

    Brownies

    2 cups sugar
    3/4 cups butter, softened and 3/4 cups lard, softened and combined together
    1 cup all purpose flour
    1/2 tsp. salt
    1 tsp. baking powder
    4 eggs, beaten
    1 tsp. vanilla
    1/2 cup cocoa
    1/2 cup nuts

    Cream sugar and shortening well. Add eggs, vanilla, and nuts. Sift together flour, salt, cocoa, and baking powder. Add to sugar mixture and stir well. Bake in a greased and floured 8x14 pan at 350 degrees. Sprinkle with powdered sugar.

    Butterscotch Pie

    1cup brown sugar
    1 cup boiling water
    2 tbs. flour
    2 eggs
    2 tbs. butter

    Boil water and butter together. Beat eggs, add flour and sugar, dissolve in a small amount of cold water. Pour this mixture into hot water. Cook until thickened. Pour into a baked pie shell.

    This recipe is from one of my favorite Amish cookbooks... How can you go wrong, if you are cooking like the Amish. Enjoy!!!!

    Easy Chicken Alfredo

    3 chicken breast
    1 can cream of mushroom soup
    1 can cream of chicken soup
    1 can cream of potato soup
    1/4 cup chicken broth
    1/2 cup grated parmesan cheese
    1 cup shredded cheddar cheese
    1 box bowtie pasta

    Boil chicken breast and shred into a 9x13 baking dish. In the water used to boil chicken boil pasta until tender and drain. Mix pasta in with the shredded chicken. Add in all other ingredients except the cheddar cheese and mix well. Sprinkle cheddar cheese on top. Bake in a 350 degree oven for 20 minutes.

    This is  quick and easy fill'em up kinda meal.

    Quick Salad Dill Pickles

    7 Cucumbers
    Water
    White Vinegar
    1 tsp Dry Dill Weed

    In a large bowl slice cucumber. Mix together equal parts water and vinegar. Pour mixture over sliced cucumber and let it rest in vinegar bath for 15 minutes. Add dill weed. Put in a glass container and refrigerate. They are ready to eat, but are better if you let them sit. These pickles are great for salads.
