I am a very happy and blessed wife, mother, and grandmother. My love of cooking came from the love that I have for my family. It warms my heart to hear my husband or one of my children ask me to cook something for them. Not so long ago one of the ladies from my church, ask me to teach her to cook a real southern dinner of fried chicken...what an awesome honor that was! This started me to thinking that alot of newly married people would love to be able to cook a "for real" southern dinner, as well as couples that have never been introduced to the art of southern cooking.... so the blog begins. I hope everyone enjoys it and takes alot away from it. It comes from the heart, but may NOT be so heart healthy. It is Just Good Ole Fashion Southern Cooking!!!!

Salmon Patties

1 can salmon
1cup chopped onion
1/2 cup flour
1egg
salt and pepper to taste
1 1/2 cup oil

Drain and debone salmon. Mix together all ingredients, except the oil. In a large skillet heat oil on medium heat. Roll salmon mixture into small patties and place in hot oil. Fry until golden brown on both sides. Serve with grits.

Praise the Lord whole heartedly

He is merciful and gracious
Slow to anger
He is full of unfailing love
He will not falsely accuse or stay angry long
He does not punish all of your sins
nor deal with you harshly
He removes your rebellious acts
He is a Father to you
He understands your weakenesses
Even though your days on earth are short; the love
of the Lord remains forever
He extends Salvation to his children
He rules over everything from His throne in heaven.

Potatoe Soup

1lb. potatoes
1 can cream of mushroom soup
1 can cream of chicken soup
1 can cream of celery soup
1 can cream of potatoe soup
1/2 cup butter
1/2 cup chopped onion
1 can chicken broth
1 pack bacon
1 cup milk
Salt to taste
Pepper to taste
1tsp. tobasco sauce (optional)

Peel and dice potatoes; boil in enough water to cover potatoes; boil until potatoes are tender. In a small frying pan add butter and onions and cook over medium heat until onions are carmellized. Set aside.  Cook bacon until crisp and drain fat on paper towel.Once potatoes are done; do not drain water...add in onions, crumbled bacon, and remaining ingredients. Simmer on low heat, stirring often to prevent sticking for about 2 hrs. Serve with sourcream and cheese.

This recipe is also excellent for crab stew...just omit the potatoes and add the crab meat...make sure to use the tobasco sauce.

Yellow Rice Casserole

1 bag yellow rice
1 can tomatoes- stewed
1lb. ground beef
sliced american cheese

Brown ground beef, drain well and place in a 9x13 baking dish. Prepare rice according to directions on the bag. Pour rice over ground beef. Pour can of tomatoes over rice and add sliced cheese to cover the top in a single layer. Bake in a 350 degree oven for 20 minutes... So easy !

Southern Meatloaf

2lbs. ground chuck
1 egg
1/4 cup onion diced
1/4 cup bell pepper diced
1 small can sliced mushrooms
1/8 cup ketchup
1 tablespoon mustard
1 tablespoon A-1 sauce
salt to taste
pepper to taste
seasoning salt to taste

Mix all ingredients well and place in a loaf glass baking pan. Bake on 350 degrees for 1 hr. or until done.

Topping

1 cup ketchup
1/4 cup sugar

Mix well. Pour on topping and bake another 10 minutes or until topping has thickened slightly.

Peach Cream Pie

1tbsp. gelatin
1/4 cup cold water
3 cups fresh peaches
3/4 cup sugar
1/8 tsp. salt
1/2 cup whip cream

Heat gelatin and water to dissolve on low heat. Slice peaches and add sugar. Let stand for 10 minutes. Add dissolved gelatin and salt to peaches. Fold in whip cream. Pour into a baked pie shell. Chill for 2 hours or more.

Psalms 18:1-3

I love you Lord; you are my strength. The Lord is my rock, my fortress, and my Savior; my God is my rock, in whom I find protection. He is my shield, the strength of my salvation, and my stronghold. I will call on the Lord, who is worthy of my praise, for he saves me from my enemies.


I love this passage...He is everything to me during the good and the bad, but I am thankful that Jesus died on the cross for me. Now I can go to him in times of trouble and know that he is there to help me.Praise God.
